Coffee Beans for the De’Longhi Magnifica Evo: What to Choose and Avoid

Choosing beans for a Magnifica Evo is less about finding a special brand and more about matching the roast to your drinks while keeping unsuitable coatings out of the grinder. This guide explains a practical starting point, what to avoid and how to make small adjustments when the coffee tastes wrong.
About this guide: Manufacturer guidance and editorial advice, rather than a hands-on bean taste test. We have not tested or ranked individual coffee brands in the Magnifica Evo.
Which beans should you try first?
For a first purchase, we suggest an unflavoured medium roast described as balanced, chocolatey or nutty. This is an editorial starting point, not a requirement from De’Longhi or a guarantee of a particular flavour. Roast labels vary between roasters, so the description and the beans’ surface matter alongside the words on the bag.
If you mainly make cappuccinos and lattes, try an espresso blend with the kind of flavour you enjoy through milk. If you mostly drink black coffee, consider whether you prefer a rounded chocolate profile or brighter fruit notes. A lighter roast can be enjoyable, but it may take more experimentation and is not our simplest first choice for someone learning the machine.
| Your preference | Starting point | Check before buying |
|---|---|---|
| Mostly milk drinks | Medium roast espresso blend; chocolate or nut notes | Unflavoured beans without a heavy oily coating |
| Mostly black coffee | Medium roast with flavour notes you already enjoy | A small bag so you can judge it in your machine |
| Lower caffeine intake | Roasted decaf whole beans | Bean condition and your model’s instructions |
| Still discovering your taste | One balanced blend at a time | Avoid changing beans and every machine setting together |
You do not need to start with an expensive subscription or a kilogram bag. A smaller purchase lets you learn what you like without leaving a large quantity open. Brand popularity and a high bag price are not proof that the coffee will suit your preferred drink.
Which beans should you avoid?
De’Longhi’s fully automatic machine support warns against beans that are too oily, caramelised or coated because they can stick to the grinder. Use plain roasted coffee and check the instructions for your exact model. Do not put sugar-coated beans, green unroasted beans or other ingredients into the hopper.
A bag describing natural tasting notes of caramel, chocolate or hazelnut is different from coffee with added flavouring or a sugar coating. Read the ingredients or ask the roaster if the description is unclear. For a simple starting purchase, choose coffee with no added flavouring.
Do not assume every dark roast is unsuitable, or that every medium roast has a dry surface. Inspect the actual beans and ask the supplier whether they recommend that coffee for an automatic machine. If beans look heavily slick or sticky, choose another bag rather than trying to compensate with grinder settings.
How to adjust the taste without changing everything
Begin with the machine’s normal starting settings and your usual drink. Keep the beans and recipe consistent while you assess the result. The grinder setting, aroma or strength option and drink volume are different controls; changing them together makes it hard to identify what helped.
If the drink tastes weak: first check whether you are making a long drink with a relatively small amount of coffee. Try an available higher aroma setting or a shorter drink, following your model’s instructions. A weak cup is not automatically a reason to turn the grinder to its finest position.
If you need to change the grind: De’Longhi says to move the dial only while the grinder is operating, one notch at a time, then allow a few coffees for the change to show. Its guidance describes a move towards 1 as finer and towards 7 as coarser. Check your own dial and manual before making an adjustment.
If delivery becomes very slow: do not keep making the grind finer. Follow the manual’s troubleshooting steps. Persistent blockages, warnings or abnormal operation need the manufacturer’s support rather than repeated trial-and-error adjustments.
A sour or bitter taste can have several causes, including the beans, recipe and machine condition. Treat flavour as feedback rather than a precise diagnosis. Try a different roast after you have given a consistent recipe a fair chance. For the wider workflow, read our Magnifica Evo buying guide.
Buying and storing your beans
Buy an amount you expect to use reasonably quickly and keep the remaining beans sealed in a cool, dry, dark place. Avoid storing the bag beside a hot appliance or in direct sunlight. Follow the roaster’s storage advice and keep water away from the hopper.
Top up with a sensible amount rather than using the hopper as long-term storage for an entire large bag. When changing coffees, expect some overlap while remaining beans and grounds work through the machine. Do not reach into the grinder or try to remove its internal parts to speed up that change.
Beans also do not replace cleaning. Follow the model’s instructions for the brew unit, grounds container, drip tray and milk system, and respond to descaling prompts. Our espresso machine cleaning guide explains the difference between coffee residue, milk residue and mineral scale.
Common questions
Do I need De’Longhi-branded beans?
Our advice is to choose suitable plain roasted whole beans according to your taste and the model’s instructions. A machine-branded bag is an option, rather than the basis of our recommendation.
Can I use supermarket coffee beans?
Judge the actual bag: whole beans, suitable roast and surface condition, no unsuitable coatings, and an amount you can use while fresh. The retailer alone does not tell you whether you will like the coffee.
Can I use ground coffee instead?
Check whether your exact model has a pre-ground mode and follow its instructions for the correct funnel, quantity and compatible recipes. Ground coffee must not go into the whole-bean hopper.
What is the best grinder number?
There is no single setting we can promise for every bean and drink. Start with the factory guidance, then make small changes only as the manual permits. We have not measured a universal best setting.
Sources and model checks
Check the model number on your appliance before following a manual. The Magnifica Evo family includes different regional versions and drink controls. Manufacturer references: De’Longhi: fully automatic machine care and beans; De’Longhi: grinder adjustment; Magnifica Evo manual finder; US ECAM29084SB support.
Our recommendation: Start with a small bag of plain, mostly dry-surfaced medium-roast beans. Choose for the drinks you make, keep adjustments gradual and let your taste decide the next bag. If you are still choosing a machine, compare the workflow in our espresso machine types guide.
